SPECIALTY SHELF

A Southerly Course - Martha Hall Foose (2011)

I am not sure what I was expecting when I ordered this book by this Mississippi chef. I guess, when I think of Southern food, I think, cheesy, greasy, fatty, heavenly goodness. The cover shows a beautiful picture of a woman in a mint green apron holding peaches, I thought the book would be sweet, and heavy. OK, enough about what I thought, I'll tell you about what is actually in the book. Weird recipes. For instance, venison meatballs, doe loin with winter biscuits (Bambi?! Are you there?), rabbit terrine, a chicken liver spread (live ... enough said), burgundy duck (I love ducks), etc. After you get past the "specialty" meats used, you get to the salads, which are pretty tasty! There are also some good desserts. I love the pictures in this book, the stories with certain recipes, and the easy-to-follow directions. If you love decadent desserts and delicate fancy salads, get this book for those alone. An interesting book, just not what I was expecting. (AV)
